Yummy Cherry Coffee Cake


Yesterday was a fun day...Katie had spent Sunday night with me and we spent yesterday hanging out... talking, cleaning, and cooking. My entire family was able to come that evening, and for dinner we had stuffed shells, (large pasta shells filled with a ricotta cheese mixture and topped with spaghetti sauce) green salad, and french bread. For dessert we made a super-easy cherry coffee cake recipe from my latest Taste of Home magazine. Unfortunately, we didn't take a picture, but I'll give the recipe anyway!

Cherry Coffee Cake

Prep: 25 min.
Bake 35 min. + cooling

1 package yello cake mix, divided
1 cup all purpose flour
1 package active dry yeast
2/3 cup warm water
2 eggs lightly beaten
1 can (21 oz) cherry pie filling
1/3 cup cold butter

Glaze:
1 cup powdered sugar
1 tablespoon corn syrup
1 to 2 tablespoons water

In a large mixing bowl, combine 1 and 1/2 cups dry cake mix, flour, yeast, and water until smooth (use an electric mixer). Stir in eggs until blended. Transfer to a greased 9 by 13 in. baking dish. Carefully spoon pie filling over top.

Place remainng cake mix in a bowl and cut in butter until crumbly. Sprinkle over filling. Bake at 350 for 35-40 minutes or until lightly browned. Cool on wire rack. Combine glaze ingredients and drizzle over coffee cake. Serves 12-16.

The cake was delicious, Jessica! For breakfast I ate the piece I took home, and it was great with coffee. Thanks for posting the recipe. Also, thanks for having us over for dinner last night. You and Justin were wonderful host and hostess, and we all had a good time. love you, Mom
